Birichen : It is arrived. It could not miss! We are in Bologna hills and pignoletto could not be in our wine list!. Birichen has a fermentation in stainless still and a rifermentation inside the bottle with indigenous sugar and yeasts. Everything is autochtonous and only made in Bologna’s hills. The harvest is made at the beginning of September because we wanted the right acidity and freshness for our must.The wine’s must has fermentation with its own yeasts, than we made the second fermentation inside the bottle. Birichen is an unfiltered wine with a small addiction of sulfur dioxide before bottling.It has a very light bubble that is perfect to be drank with the all italian food specialities. It is a wine that brings joy and conviviality, typical emotions of our land.

100% Grechetto gentile’s grapes of bologna hills produced according to biodynamic farming. Naturally vinified with indigenous yeasts. The refermentation takes place thanks to the farm’s must.Wine produced with the ancient method of refermentation in the bottle called “surlie”.
